Francesco Brocca, the Michelin Star chef and creative powerhouse behind Goccia’s culinary success, has crafted a menu of succulent luxury to welcome in the cooler months of autumn. From October to November Brocca will sculpt a series of unique dishes featuring white truffles and porcini mushrooms imported straight from Italy. “The white truffle and porcini mushroom are synonymous with luxury in the world of gastronomy; they’re the crown jewels of cuisine,” enthuses Brocca. “The only words I can use to best describe their sublime aroma and taste are “hearty” and “heavenly”. It’s little wonder Italians refer to these truffles as white diamonds!” This mouth-watering menu includes Smoked Duck Breast Carpaccio with Alba Truffle and Marinated Mushrooms; Sea Scallops and Rocket Salad with petals of White Truffle; Wild Mushroom Cream Soup flavoured with White Truffle; Home-made Fettuccine with Alba Truffle and Chanterelles Mushrooms glazed with fresh mountain Butter; Fillets of Turbot with sautéed fresh Porcini and shaved White Truffle; Mille-feuille of Beef Tenderloin layered with Forest Mushroom on a rich Alba Truffle Sauce; and finally New Zealand Lamb Cutlets filled with Foie Gras and White Truffle encased in a crunchy Almond crust.
