Renowned for her creative flair, the ultimate style icon, Bonnie Gokson is back and about to set Central Hong Kong’s dining scene alight with the opening of a new hot spot at the penthouse level of Prince’s Building, SEVVA Hong Kong.  

Pronounced ‘Savour’, meaning to experience a taste, SEVVA will deliver a unique and quintessentially Hong Kong dining experience inspired by what Gokson describes as ‘the DNA’ of Hong Kong– traditional regional Asian cuisines intermixed with Western fine dining, coupled with her own travels and experiences.  

SEVVA will be located at the top of Central’s designer shopping mall, Prince’s Building - suitably positioned to enjoy stunning 360 degree views over Hong Kong’s breath-taking skyline and the prime heart of the city. 

Not only a restaurant and bar, it will be a space for meeting, dining and socialising: SEVVA will be an oasis above the city where people will want to meet up, be it for a light bite, daytime grazing, a full meal or to sip a few cocktails under the stars.

Designed by Calvin Tsao of Tsao & McKown Architects in New York (awarded in the Hall of Fame in the USA), together with Gokson and Team HC in Hong Kong, each enclave of the restaurant will have its own stamp. But rather than the modern, cool, minimal look that has swept the globe, SEVVA will offer a warm, soulful and energetic ambiance which seamlessly blends East with West, masculine with feminine, everyday versus ceremonial and casual versus formal. 

SEVVA will present four distinct areas within its penthouse location: Harbour Side, Bank Side, Taste Bar, and a vast terrace - as well as a Cake corner. 

Like entertaining at home where guests can retire from one room to another, SEVVA will entice people to move through the various spaces and moods. 

Harbour Side will offer “easy glamour” dining where people will meet for a relaxed all-day dining experience. Quality food produce, organic vegetables and home favourites will feature on the menu. 

Bank Side will be a more formal affair in both mood and cuisine, and diners will be pampered with a carefully balanced menu of luxurious and indulgent ingredients.

The terrace will offer comfortable lounge seating and areas for cigar smoking, at the same time, lending itself well to private and corporate functions. 

For cosier get togethers, Taste Bar, open all day, will serve a selection of rare vintage wines, New World labels and fine Champagnes, alongside a menu of beers, spirits, freshly mixed fruit infused cocktails and organic vegetable juices.  At Taste Bar, small plates will be served as well as daily bento boxes.

Adjoining each of the distinct dining areas is a sprawling terrace allowing for exquisite year round al fresco dining and magnificent views over the heart of the Hong Kong harbour and financial district.   

SEVVA will serve simple, honest cuisine: no overly ‘handled’ or fussy foods but instead uncomplicated, good quality dishes derived from the freshest available produce. 

Conscious of health, well-being and appreciating the importance of good ingredients, the kitchen team will source from around the world to serve only the best of the best – with as high a percentage of the ingredients as possible from organic farm sources.  Food will be taken back to its basic form and worked to create maximum flavour and impact. 

Even the water used throughout SEVVA has been thoughtfully considered and the restaurant will only use a specialised water system which completely cleanses water of chemicals and metals and is beneficial to the body. 

Since Bonnie Gokson is an avid art and music collector, both will play a big part in SEVVA’s ambience and elegance. Stunning 20th Century International artworks from London’s Fine Art Gallery will be displayed, whilst Jazz, Bossanova and sometimes Classical & Baroque pieces will be enjoyed by music lovers.

Commenting on her new venture, Gokson said, “This will be my interpretation of the Hong Kong I have known, together with elements from my travels and experiences around the world. I appreciate and respect tradition and culture. SEVVA is a timeless classic, which brings back these traditions but entwines them with modernity for people who appreciate the finer things in life. This is my contribution and passion to the city that I love.”

Gokson has overseen the project from start to finish, conceptualising the space, design and menus right down to the all-important finishing touches.

SEVVA, is due to open in March 2008 and is already tipped to be the next “THE” restaurant for every resident or visitor to Hong Kong.
