Sushi is about to get uber chic, thanks to a sassy new take on traditional Japanese “kaiten sushi” in the space next to Lane Crawford in Pacific Place. Shiro is another groundbreaking creation from Aqua group founder David Yeo and presents a sleek new version of the familiar Japanese all-day casual food concept where customers select sushi from a sushi-train winding through the restaurant. Shiro is “where sushi meets fashion” and each deftly designed creation is stunningly presented along a sushi “catwalk” in equally inspiring surroundings. Typical of Yeo’s glamorous creations, the 2,500 sq ft restaurant sets new standards for both interior design and food presentation, yet in a fast paced, casual all-day dining environment. Shiro offers equally enticing menus for all occasions, whether for a quick lunch, afternoon snacks while shopping, chatting over cocktails after work or even a long, fashionable people-watching dinner. As with all Yeo’s restaurants, food quality and presentation are of the highest quality and sushi are flown in jet fresh from Tokyo’s famous Tsukiji Market daily. Some of the signature melt in your mouth sushi on offer include A5 grade Japanese wagyu beef, and special milk fish sushi. The ultra stylish presentation of each of the dishes is a hallmark of the restaurant. And just as in the fashion business, for those who want it fast and ready to go, Shiro offers its own “prêt-à-porter” takeaway sushi menu. There is also a special art to preparing the rice for the perfect sushi, an art which has been perfected by the chefs at Shiro. Other menu highlights include a deliciously crispy soft shell crab salad with house-made soy vinaigrette, araba crab tempura with miso paste and a slow cooked Kobe beef on braised Japanese turnip and sweet miso sauce which oozes with rich flavour. A glamorous adjoining bar for after work drinks showcases quality imported sake. Seating 25, the bar includes an extensive range of sake available by the carafe, or 300ml and 720ml bottles. Shiro’s mixologists meanwhile create innovative cocktails such as the Shiro Lychee Mojito and Sake Spritzers, not to mention classic Martinis. A succinct list of wines specifically chosen for their ability to match with delicate Japanese flavours is also on the menu including more than ten wines served by the glass. The interiors by David Yeo are every bit as stunning as the food, and include custom-designed light fittings, mirrored panels and wall design motifs based on the symbol of Japan’s samurai warriors. A unique and beautiful cherry blossom design feature is sure to make any visit to the ladies bathroom memorable.
