The borderless authentic Okinawan restaurant with touch of metropolitan Tokyo has arrived
Epicurean Group is delighted to present our most recent member, NAHA, an authentic Okinawan restaurant located at Taikoo Shing, serving health-conscious Okinawa cuisine. From our Executive Chef to ingredients as well as the décor, all can trace its roots back to Okinawa. About Okinawa - Okinawa prefecture lies in the sub tropical zone at the Southwestern Japan. ‘Japan’s Hawaii’ is its nickname but more people know it as Ryukyu. The coastal Naha is its capital city as well as its economic, political and education hub. The Okinawans are well known for their longevity and their healthy diet is the thing worth to look into, such as bitter gourd with lots of vitamin, protein-rich pork, cholesterol-free seaweed, and most of all the low calorie sea grape, also known as “green caviar”. About our Chef - Okinawan chef Seiichiro Asato flied in from Japan to offer NAHA guests his hometown favorites. This 55-years-old chef has over 25 years’ culinary experience and has worked in several restaurants in Okinawa and Tokyo. The dishes he prepared top with the essence of metropolitan Tokyo, authentic yet modern. According to Chef Asato, cooking his native Okinawan cuisine not merely allows him to share this unique hale and hearty spirit of Okinawan with others, but also allows him to express his nostalgia through the cooking. Besides Chef Astao, our Sushi and Sashimi Chef Wong Tak-Ming is our other hidden gem with his master skills and sincerity. About our Menu - What’s on the menu is all authentic Okinawan gourmet food. To start with, there are Sea Grapes and Homemade Peanut Flavored Bean Curd as our specialties. Followed with our 10 Chef’s Recommendations, including Deep-fried Pork Croquette with Sweet Potato, Grilled Bitter Gourd with Fish Paste, Stewed Seasonal Fish with Japanese Sea Salt, Stewed Pork Knuckles and Squid Ink Soup etc. Other unique dishes are Sautéed Stewed Sponge Gourd with Miso, Deep-fried Mugwort, Japanese Wheat Gluten, Onion and Mixed Vegetable Cake, Sautéed Okinawa Bitter Gourd with Pork and Okinawa Seaweed Congee, just to name a few. Most ingredients, such as pork, bitter gourd, taro, seaweed, sea grape, squid ink and aloe etc, import directly from Okinawa. Besides, in order to offer more choices to guests, NAHA airfreights the freshest and seasonal sashimi and sushi from Japan. About our Décor - Yasuhiro Yasukagawa, our Japanese interior designer, brings the essence of this sunny island to NAHA in various ways. The red bricks at the entrance, meant to keep the stormy weather away, symbolizing a safe home for the families. The 15 “Shisas” are traditional Ryukyuan statues which act to protect families from danger, the open-mouth ones allow the good spirits in while the close-mouth ones get rid of the bad spirits. Besides, the Okinawa-oriented irregular white Ryukyuan bricks and the traditional dyeing art bingata with pine, bamboo & plum pattern are also found at NAHA as an artful and cultural touch of Okinawa.
