蘋果酒就飲得多,keeved 蘋果酒你又試過未?今個星期四晚一於過嚟試下來自英國 Pilton Cider 嘅 Keeved Cider 啦!用上源自洛曼蒂嘅Keeving釀酒方法,利用釀造過程中形成嘅果膠困住果汁內嘅營養,另外只用Wild Yeast發酵,從而拖慢成個釀造過程,並且過程中絕不加入糖或水,只係用蘋果釀出partly fermented以及甜度自然嘅craft cider!
Tasting platter $178 for 4 x 150ml cider
1. Pilton - Pilton (the OG) 80% 發酵,單寧較重嘅Cider。
2. Pilton - Solitic (using late harvested apple) 用上遲收成嘅Bittersweet Apple釀造,70% 發酵,糖度較高。
3. Pilton - Tamoshanta (Barrel fermented) 經過初步keeving發酵後,再到威格威士忌酒桶熟成,充滿橡木香氣。
4. Pilton - Max Lux 2014 (Special Edition)用2014收割嘅苦甜蘋果釀造,由2015 bottle aged到宜家,屬於dry cider。
