On the 20th of November, BEDU is hosting a Modern Australian dinner, it's the one Chef Corey is most excited about in the series of special dinners we've hosted in 2019. Corey revisits some childhood favourites, Aussie classic combinations, as always with his own take on things. A cuisine defined by the nation's multicultural population, if you've ever wondered what is Modern Australian? you'll find the answers at BEDU for one night only.
Start the night with Tempura oyster served with lemon verbena and tomato cream ; Saltbush smoked duck parfait and charred sourdough ; Cured garlic prawns with coriander and finger lime.
For the next wave, think Salmon Kiev (rolled salmon) crumbed and fried, stuffed with garlic butter ; Four’N’Twenty pie
42 hour beer braised beef brisket with bone marrow gravy and mushroom ketchup.
End the night on a sweet note and enjoy our Anzacs and apples dessert made with Anzac biscuit ice cream, caramelised apple and crispy filo and the sweet goodbye of “Fairy bread” Sourdough doughnuts, butter glaze, hundreds and thousands.
The menu costs $605 / person and only a limited number of menus will be available on the night.
